16 - 1 tablespoon extra virgin olive oil
17 - 1 teaspoon Dijon mustard
18 - 1 small garlic clove, minced

# How-To Steps:

01 - Preheat the oven to 400°F.
02 - Toss sweet potato cubes with olive oil, smoked paprika, and sea salt. Spread them on a baking sheet in a single layer and roast for 25 to 30 minutes, flipping halfway through, until tender and lightly browned.
03 - Combine quinoa and water in a saucepan. Bring to a boil, then reduce heat to a simmer, cover, and cook for 15 minutes or until the water is fully absorbed. Fluff the quinoa with a fork and set aside.
04 - In a bowl, whisk tahini, lemon juice, maple syrup or honey, warm water, olive oil, Dijon mustard, minced garlic, salt, and pepper until smooth. Add additional water if a thinner consistency is desired.
05 - Start with a base of greens in each serving bowl. Add a scoop of quinoa, roasted sweet potatoes, shredded red cabbage, cherry tomatoes, avocado slices, and radishes.
